440Cは高炭素ステンレス鋼の一種で、高い硬度（HRC58-60以上）と優れた耐摩耗性・耐食性を持つ包丁素材です。鋭い切れ味を長く維持でき、錆びにくいためメンテナンスも比較的簡単です。一方で、粉末鋼やVG10ほどの切れ味の持続力はなく、強い衝撃で刃こぼれすることもあります。コストパフォーマンスが良く、家庭用や趣味の包丁として適した鋼材です。
